    Is there only one …
Is there only one Gourami, or do you have a pair? Gourami prefer to live under a canopy of plant growth generally, of get among plants whenever they can use them for cover. You could try feeding live daphnia to encourage it to come out and hunt for food or it may just be a shy fish.
Fish are like people in that some are exhibitionists and always want to be seen, while others freak out and want to hide. If there are other, more active fish in the tank, it may be freaked by their activity.
